Super Healthy Breadmaking

 Learn why Supermarket bread is so bad for your health, even the whole wheat versions, and how easy and quick it is to make the healthiest breads at home.  This course will introduce you to the basics of baking breads with whole grains. You will explore flat breads and sourdough breads and learn the secrets of buying and using whole grain flours from wheat, barley, rye, and non-gluten grains. You will learn the nutritional secrets behind sourdough bread making and make a 10 minute sourdough whole grain spelt loaf and a traditional Indian millet flat bread.

All About Beans

The bean food group -- lentils, chickpeas, black beans, adzuki beans, and the like -- is the most important and most neglected food group in our culture.  Studies show that the single most important predictor of longevity is bean eating, and there are just so many ways of eating beans. This course will teach you how to perfect the elusive bean burger, how to make a beans part of a salad,  and to use them in stews and casseroles. Get the information you need from bean nutrition to secrets of getting a picky eater to love beans.
